Vegan Burritos

Want a really healthy burrito?  This is a recipe that we really love and have made several times.  It’s fairly easy to put together and doesn’t take a whole lot of time.  And if you’re cutting meat out of your diet these vegan burritos are a great option.

What you need:

vegan burritos-1 cup (dry) brown rice
-1 can black beans
-1 green bell pepper
-1 red bell pepper
-1/2 onion
-2 cloves garlic
-whole wheat tortillas
-1 T cumin
-1 T olive oil

To assemble:

-Cook rice in a rice cooker, it will automatically shut off when done.  Should take roughly 40 min.

-Chop onion and garlic and saute in olive oil on medium heat.

-Chop peppers and add to garlic/onion mix when the onions are getting soft.  Also add black beans and cumin and cook for 15 minutes on low/medium heat.

-Heat tortillas up in microwave or oven.

-Place brown rice on top of tortilla, add veggie mix and top with salsa if you want and enjoy!
