Spaghetti Squash w/ Homemade Sauce

I just made this a couple days ago and thought it was too good to not post on the site.  I had never made spaghetti squash before so I didn’t quite know how it was going to turn out, but I was pretty pleased with the outcome.  I also recently got a Ninja blender/food processor so I was anxious to use that as well.

All you need to make this delicious meal is:

-1 spaghetti squash
-4 vine ripened tomatoes
-1 green bell pepper
-1 small yellow onion
-1 T oregano
-1 T basil
-1/2 T garlic powder
-salt & pepper to taste

To prepare the meal, there are actually fairly easy directions:

1) Cut spaghetti squash in half lengthwise (it’s hard, but it will save you some cooking time), scoop out the seeds and fibers and place cut-side down in a shallow baking pan in a 375 degree oven.  This will take 35-45 minutes to cook.

2) Place the tomatoes, green pepper and onion in your food processor.  Blend to the consistency you want.

3) Pour your sauce into a pan and heat over the stove, adding the rest of the ingredients.  Keep on very low heat and wait until the spaghetti squash is done.

4) When you can puncture the outside of the spaghetti squash with a knife easily then it is done.  Take the squash out of the oven and when it is cool enough to handle, scrape out the cooked squash.  It will come out in long strands, hence the name.

5) Use the squash just like you would spaghetti noodles and enjoy!
