Lentil Soup Recipe

Since I’ve been eating mostly plant-based for a while now, I do look for foods that are still high in protein and lentils are a great option for plant-based protein.  I haven’t used them a ton, but I decided to make up my own lentil soup and it turned out great!  This is a fairly hearty soup so it really fills me up.  If you’re looking for a good lentil soup recipe, give this a try.

-1 cup lentils
-2 cups veggie broth
-1 can of fire roasted tomatoes
-1 green pepper
-1 red onion
-1 T of cumin
-1 t of salt

To prepare:

-Cook lentils in a sauce-pan with 2 cups of water.  Bring water to a boil, then reduce heat to simmer and cook until tender.  Can take anywhere from 15 minutes – 1 hour

-Chop green pepper and onion, and put those, along with the rest of the ingredients in a large pot.  Bring to a boil, then reduce heat to a simmer for 20-30 minutes.
