Green Goddess Dressing

green goddess dressingSince I eat mostly plant-based, I find myself eating salads pretty much every day.  Sometimes for lunch and sometimes for dinner.  One thing that I think can be difficult is to find salad dressing that is healthy and doesn’t contain a bunch of bad ingredients.  Most of the salad dressings that advertise that they are “low fat” typically just contain a bunch of sugar to make up for the lost fat.  On the other hand there are plenty of dressings that have a ton of fat.  Salad dressing can actually turn a salad (supposed to be healthy, right?) into one of the worst things on a menu at a restaurant.  Most chicken caesar salads are absolutely horrible for you because of the dressing.

So I want to start making my own salad dressings, and I started with this Green Goddess dressing.  Honestly I just googled “vegan green goddess dressing” and this was one that looked good.  Many recipes contain mayo, but that would defeat the purpose of making a healthy salad dressing.  I made this recipe based off of the recipe on, with a few modifications.

Green Goddess Dressing Ingredients

  • 2 garlic clove
  • 1 cup packed avocado flesh (2 small)
  • 1/4 cup water
  • 4 tbsp apple cider vinegar
  • 3-4 tbsp fresh lemon juice
  • 3-4 tbsp fresh lime juice
  • 1/4 cup extra virgin olive oil
  • 1/2 cup packed fresh basil leaves
  • 1/2 cup packed fresh parsley
  • 1 tsp kosher salt, or to taste

I just put everything into my blender and blended until smooth.  Mine came out pretty tangy and I wasn’t quite sure if I liked it at first, but then I put it on a salad and it was great.
